Kodo millet pulao
Ingredients
• 1 cup kodo millet
• 2 cups chopped carrots, beans, capsicum and peas
• 1 chopped onion
• 1 sprig curry leaves
• 2 tbsp ghee or oil
• 2 bay leaves
• 1 tsp cumin seeds
• 1/2 tsp garam masala powder
• 1/2 tsp turmeric powder
• salt to taste
• 2 cups water
• juice of half lime
Coriander-mint paste ingredients
• 1/4 cup coriander leaves
• 1/4 cup mint
• 3 green chillies
• 3 cloves garlic
• 2 tbsp chopped onion
• 1 inch ginger
• 2 cloves
• 1 cardamom
• 1 inch cinnamon stick
Method
• Soak the millet in water for 15-20 minutes.
• Grind all the ingredients for the coriander-mint paste till smooth.
• Heat oil in the pressure cooker and sauté the whole spices. Add curry leaves and then the onions, and sauté for 2-3 minutes.
• Add the coriander-mint paste and cook for 2-3 minutes till the raw scent disappears.
• Add the chopped vegetables and cook for 1 minute.
• Mix the rinsed millet and other ingredients.
• Pressure cook for 2 whistles.
• Once the pressure has naturally released, add lemon juice and mix well.
• Garnish with chopped coriander leaves.
• Kodo millet pulao can be served with yogurt or raita for a healthy lunch.
