Ingredients:
• ½ cup rice
• Vegetables of choice (carrot, onion, beans) – finely chopped
• 1/4 cup soya chunks
• Bay leaf
• Curry Leaf
• ¼ tsp Turmeric powder
• ¼ tsp cumin seeds
• ¼ tsp mustard seeds
• ¼ tsp garam masala
• .2 tbsp oil
• Salt
Method:
• Soak the rice in water for 10-15 minutes, rinse and drain. Keep it aside.
• Wash the soya chunks and soak in water for 10-15 minutes until they swell. Squeeze the water out and rinse again. Repeat the process until all the water is squeezed (2-3 times)
• Heat oil in a pan. Use medium flame. Add cumin seeds, bay leaf, mustard seeds and curry leaf. Stir fry for a while. You can also add peanuts.
• Add onions, vegetables of your choice and turmeric powder and saute for 1-2 minutes. Next, add the chopped vegetables and stir fry for a few minutes.
• Now add the rice to a pan and mix well. Add salt and garam masala to taste
• Transfer to a pressure cooker. Add about ½ cup hot water and give it a quick stir. Once the water starts to boil, cover the cooker and wait for 2 whistles.
• Open the lid and stir without breaking the grains of rice.
• Serve with raitha or plain curd.
