Elumichai thenai – foxtail millet lemon rice​


• 1 cup foxtail millet

• 1/4 cup raw peanuts 

• 1/4 cup chopped carrots 

• 1 tsp sesame oil

• 1 tsp mustard seeds

• 1 tsp turmeric powder 

• 1 tsp split urad dal 

• 2 finely chopped green chillies 

• 1 sprig chopped curry leaves 

• 1 inch grated ginger 

• juice of 1 lemon 

• small bunch finely chopped coriander leaves

• salt to taste


 Pressure cook the millets in 1 ½ cups of water for 2-3 whistles. 

 Heat oil in a kadai and temper the peanuts, urad dal and mustard seeds. 

 Add the ginger, curry leaves, green chillies and turmeric powder. 

 Sauté for a few seconds. Add carrots and sauté till they soften. 

 Add the cooked millet and season with salt. 

 Cover and cook on a low heat for a few minutes. 

 Add the lemon juice and mix well. 

 Garnish with chopped coriander. 

 Elumichai thenai is ideal for a light meal.
